
This is a favorite snack in our house*. Partly because it's really really simple, and partly because it's delicious. I usually have all the ingredients on hand so it's something I can make when that trip to the grocery store keeps getting put off. The balsamic vinegar adds a bit of sweetness, which I love.
Bean & corn salsa
1 can black beans, rinsed and drained
1 can garbanzo beans, rinsed and drained
1 red bell pepper (sometimes I add in an orange pepper too)
1 bag frozen corn
2 T. white or golden balsamic vinegar
Serve with tortilla chips.

ReplyDeleteI make a variation on this, but with a "dressing" of olive oil, a little lime juice, salt, pepper, curry, and cumin. My fiance and I also like to add edamame and finely chopped carrots and celery.
